Quick note: the dish is easy to make but the yogurt requires time to leak. So, I usually start the prepping in the morning. In the evening it won’t take you more then 10 minutes to finish the dish. Strained yogurt is very thick and not particularly sweet. I like the addition of vanilla, it gives a bit of a sweet after taste however I do not need additional sugar. If you prefer sweeter desserts, you can add a bit of sugar and stir it through the yogurt.

Ingredients for 4 pers.:

  • 1 liter yogurt
  • 1 vanilla stick
  • fresh papaya
  • fresh dates
  • fresh figs
  • honey
  • fresh mint

How to prepare it:

Quick note: the dish is easy to make but the yogurt requires time to leak. So, I usually start the prepping in the morning. In the evening it won’t take you more then 10 minutes to finish the dish. You need a deep bowl, a clean towel and a colander. Put the towel in the colander and hang the colander in the bowl. Poor the yogurt in the towel and wrap the towel so nothing can get to the yogurt. Leave it for a couple of hours.

Once the yogurt has leaked enough and formed a nice curd you can put it in a mixing bowl. Cut open the vanilla stick, remove the seeds and put the seeds into the yogurt. Stir well and put the strained yogurt aside for another hour.

Cut the papaya and figs into thin slices and the dates into small blocks. Put the fruits on a plate and add a table spoon of strained yogurt. Sprinkle the dates on top of the yogurt. Heat up the honey and poor a bit over the dish. Finish with a nice green mint leave.
