Even though the leaves are already coloring the weather is still very nice, it was soft and warm when I got home yesterday and therefore I figured that it was probably the last chance to post a summer-feel like dish instead of starting with all the pumpkin and mushroom dishes. This is a very tasty couscous salad with mango, blueberries and feta cheese. The dressing adds a bit of spice that makes it a surprising combination.

Ingredients for 4 pers.:

  • 300 gr couscous
  • 75 gr feta cheese
  • 1 mango
  • 150 gr blueberries
  • fresh mint
  • olive oil
  • chili flakes
  • salt and pepper
  • lemon juice

How to prepare it:

Boil 600 ml of water. Put the couscous into a bowl and poor the boiling water on top. Cover the top and leave the couscous for 5 minutes to swell up and absorbe the water.

Peel the mango and remove the pulp from the seed. Cut the mango into small blocks. Put the blocks into a nice serving dish. Wash the blueberries and add them to the mango. Cut the feta cheese into small blocks, just like the mango and add them to the rest of the ingredients.

Chop the mint leaves. Poor some olive oil into a small bowl for the dressing, add some chili flakes (don’t be thrifty, the couscous can use a little bit of spice). Add some salt, pepper and lemon juice. Stir well.

Add the couscous and the dressing to the rest of the salad and mix everything well.
