Lovely summery mash with spinach and Italian cheeses
Ingredients for 2 pers.:
- 6 medium sized potatoes
- little bit of milk
- sundried tomatoes
- 200 gr spinach
- Parmesan cheese
- pine nuts
- fresh pepper
- 2 table spoons ricotta
How to prepare it:
Peel the potatoes, cut them into small pieces and put them with a lot of water into a boiling pan. Put the pan of the stove and heat it up.
Chop the spinach and cut the sundried tomatoes in small pieces. Fry the pine nuts in a small baking pan for a couple of minutes till they turn brownish.
After 13 minutes you can rinse the potatoes, just make sure they are soft enough to mash.
Mash the potatoes. Add the spinach, sundried tomatoes, pine nuts and some pepper to get a soft potato mash. Add some milk if needed to smoothen the mash. Finish off with the ricotta. Stir once more and serve the mash with some parmesan cheese on top.
