Perfect, one bite dish! Since it has a very strong (but lovely) taste I prefer to serve this as a small bite instead of a starter but it works fine as a starter as well. It’s a perfect New Years Eve dish! Tasty shrimp ragout with a roof of puff pastry! Enjoy!

Ingredients for 6 dishes.:

  • 250 gr pink shrimps
  • Fresh parsley
  • Fresh thyme
  • 1 onion
  • 2 tablespoons flour
  • Pepper
  • 150 ml fish broth
  • 4 pieces of puff pastry
  • 1 egg

How to prepare it:

Pre-heat your oven to 200 degrees

Peel and fine slice the onion. Chop the herbs. Put a small pan on the stove. Add a decent amount of butter. Melt the butter. Once the butter is melted, add the onion and fry for about 2 minutes. Add the shrimps, some pepper and the herbs. Fry everything for another 5 minutes.

Add the flour into the pan and start stirring. Everything will go quickly from now. The flour will start to clod together. Poor the fish broth in small batches into the pan whilst you are stirring, make sure that you take out all the clods. After a while, by adding more fish broth a smooth sauce will start to exist. If needed you can add some extra water.

Divide the ragout over small 1-person oven dishes. Split the egg, we will only use the yolk.

Cut a piece of the puff pastry that is sightly bigger then the edges of the oven dishes. Use this to cover the top so that the ragout is covered. Use the yolk to grease the top of the pastry.  Repeat the above for all the dishes.

Put the dishes in the oven for about 10 minutes. Serve them immediately, whilst they are nice and warm.
