Delicious surprising veggie – cheese dish! A small party on your plate

Ingredients for 2 pers.:

  • 1 zucchini
  • 500 ml tomato passata
  • 150 gr ricotta
  • fresh basil
  • fresh parsley
  • 1/2 red pepper
  • 1 garlic clove
  • 4 sundried tomatoes
  • Olive oil
  • 1 mozzarella
  • salt and pepper

How to prepare it:

Preheat your oven to 200 degrees.

Wash the zucchini, cut the top and bottom off and cut it (possibly with a mandolin) very thin slices.

Chop the herbs finely. Chop the red pepper finely. Cut the sun-dried tomatoes into small pieces. Cut the mozzarella into thin slices. Put the ricotta with the herbs, the red pepper, some salt and pepper in a mixing bowl. Peel the garlic, cut over half and squeeze the garlic at the ricotta. Stir everything together. Place two slices of zucchini like a cross on a plate. Scoop a little of the ricotta mixture into the middle, place some sun-dried tomatoes on it and fold the packets. Place a slice of mozzarella on it. Sprinkle some salt, pepper and oil over it. Stick it to be sure.

Prepare an oven dish. Pour a little tomato passata into the dish. Place the zucchini packets in the passata  and put the oven dish in the oven for 15 minutes.
