Soft shell taco filled with beef and veggies,. This is a real explosion of flavours, just very pure and tasty. Easy to prep after a long day at work.

Ingredients for 2 pers.:

  • 250 gr beef
  • 100 gr mushrooms
  • 1/2 red onion
  • 1/2 red bell pepper
  • 1/2 yellow bell pepper
  • 1/2 lime
  • 4 tablespoons of creme fraiche
  • dried dill
  • 1 avocado
  • 6 soft taco shells
  • fresh parsley

How to prepare it:

Cut the mushrooms into thin slices. Cut the bell peppers in thin slices as well. Peel the onion and cut them into thin slices too. Finally, cut the steak into slices as well.

Put the creme fraiche into a small bowl, add some dill, salt and pepper. Stir well and put the mixture aside.

Prep the avocado creme. Cut the avocado in half.  Take out the seed and use a spoon to take out the avocado meat. Usually I blend everything in my blender but you can also use a fork to mash the avocado. Squeeze the lime. Add the cooking cream and the lime juice to the avocado. Mash everything well with your blender or by hand. Stir everything and add some salt and pepper.

Put a baking pan on the stove and add a bit of butter. Start with frying the onion and the mushrooms. Add the bell pepper slices after 5 minutes, fry for another couple of minutes and add the steak. Sprinkle some salt and pepper on top and fry for another 5 minutes. Stir once in a while.

Prep the soft shells according to the instructions of the package. I always prepare them in the micro wave.

Finish with filling the shells. Put the veggies in a line, in the middle of the shell. Put the steak pieces on top. Add the creme fraiche mixture and the guacamole. Finish off with a bt it of chopped fresh parsley. Repeat this for all the taco’s.

Roll the taco’s firmly and serve them to you guests.
