Lovely spring starter! By boiling the celeriac it gets smooth and soft but keeps it's specific flavours, great combination with the salmon mousse and the avocado cream. Do note, the rolls need to get firm in the fridge and this takes about 2 hours, so take this into consideration when you start prepping your dinner.
I love making bruchetta's. It costs a bit of time but if you are making them anyway you can better make a couple of different versions. This one is really easy with a smooth avocado paste and some sun-dried tomatoes.
Poaching eggs.... it has been the challenge of my cooking life! I have been struggling so much and using all different tactics, but now I finally found one that worked for me. Wrapping the eggs into a bit of cooking foil!!! It's a bit of practice to find out how hard the water should boil and how long to keep the eggs in but after you found this out! Easy and tasty tomato - avocado salsa. Nice side dish for with fish or as a side salad, but also a very good topping for a bruschetta or as the filling for a wrap. Anyway; fits with everything. :)
Raw tuna, smooth and soft avocado and a lime-mayonnaise; the perfect combination of flavours. Most important is to make sure that your tune is really fresh, you do not want to get sick of course ;) but also for the taste it is so much nicer if the tuna is really fresh. This starter is really is to make and due to the combination of flavours and colours on the plate it is a raising star.
Loving this! There is just one issue; with amuses the portions are soo small! So a big tip; make enough because people are going to fight over this one.
Sometimes things just doesn't work out the way you want or had panned them. I had the same issue when prepping this dish, I imagined a great and beautiful salmon bonbon but I gave up after 6 attempts. In the end, what really matters is the taste and the taste of this combination is perfect. How can it not be with a dish of salmon and avocado. Of course, I will still work on that bonbon, because I am sure it will work somehow.
