Easter brunch tip: Grilled sandwich with avocado and a poached egg

Poaching eggs.... it has been the challenge of my cooking life! I have been struggling so much and using all different tactics, but now I finally found one that worked for me. Wrapping the eggs into a bit of cooking foil!!! It's a bit of practice to find out how hard the water should boil and how long to keep the eggs in but after you found this out! Raw tuna, smooth and soft avocado and a lime-mayonnaise; the perfect combination of flavours. Most important is to make sure that your tune is really fresh, you do not want to get sick of course ;) but also for the taste it is so much nicer if the tuna is really fresh. This starter is really is to make and due to the combination of flavours and colours on the plate it is a raising star.

Sometimes things just doesn't work out the way you want or had panned them. I had the same issue when prepping this dish, I imagined a great and beautiful salmon bonbon but I gave up after 6 attempts. In the end, what really matters is the taste and the taste of this combination is perfect. How can it not be with a dish of salmon and avocado. Of course, I will still work on that bonbon, because I am sure it will work somehow.

You can prep this starter the way I did (as a starter) or as a regular bruchetta. Serving it with other bruchettas. I prepped this bruchetta just a bit different as the other ones by grilling all of the ingredients together but of course you can also use your oven for the grilling. I love the freshness and pure taste of the ingredients in this dish.
