Delicious side dish full of veggies. Ratatouille is made all over the world with lots of different vegetables and using different cooking techniques. There is not one right way but the most important is to honor the flavours of the vegetables and herbs. To strengthen that you can add a bit of cheese but just let the veggies do the work!

My favorite quarantine dish of the last month, open lasagna! This lasagna is actually a combination of a caprese and a melanzane, but then served as a lasagna. Tip: use one-person dishes for the oven and serve the dish directly in those dishes as well.

Great lunch dish! I love the combination of flavours in this dish. The smoothness of the eggplants, the sweet yolk, the pesto bringing in the spices and the bite of the asparagus.
