Lovely vegetarian main or side dish. Easy and full of flavours, just very important that the eggplant is really soft, therefore it takes some oven time. But it is worth the wait!
Stew made with a caramel tinted bock beer gives the meat a very special but subtle flavour and it smells delicious in your house whilst this is cooking. The best part of stews is that you can enjoy a drink with your guests and don't have to be up and running around in your kitchen as the food is cooking itself!

Nice tapa or side dish, you can serve this both hot or cold. Personally I prefer it slightly warm. Smooth softly grilled eggplant filled with a nice herbal cheese.

Super nice vegetarian side dish. Tomatoes, eggplant and mozzarella already proved to be a super good combination and this dish is a very good example. If you double the ingredients you can also eat it as main course.

Thin grilled eggplant and zucchini slices topped with mustard dressing, feta cheese, pine nuts and fresh basil. A perfect addition to your Easter brunch. You can serve it cold and lukewarm and I must say that personally I prefer this one to be lukewarm.
