My favorite quarantine dish of the last month, open lasagna! This lasagna is actually a combination of a caprese and a melanzane, but then served as a lasagna. Tip: use one-person dishes for the oven and serve the dish directly in those dishes as well.
A little bit of spring on your plate! Very tasty with the pure flavours of zucchini and saffron with the bite of the crayfish and the parsley.
Lately, I've become a huge fan of open lasagna's, they are easy to make, delicious, very variable and they look like a party! This version is made with softly grilled pepper, zucchini a smooth ricotta and white wine sauce and finally crunchy Parma ham.... what else can you wish for?
