My food-blog-testers where very, very enthusiastic when I served this dish. It's always a bit tricky to be excited about something you haven't tasted yourself. Risotto balls!! My new favorite dish! Super tasty, a bit heavy so don't make too many of them but it's a real special side dish to impress your friends and family with. This version is filled with mozzarella, tomatoes and fresh basil.
Love this! The idea is really easy and again you can just variate in all different ways. It costs time to make but it really is worth the effort.

Delicious mango salad with a twist! Make sure the mango is mellow and sweet otherwise the salad looses it touch. The sweetness of the mango goes really well with the spicy chili flakes.
Chicken breasts with bacon and mozzarella. Still nice and somewhat special but also casual enough to make, perfect for these in between days.
Tarte flambe with smoked salmon, tomatoes and mozzarella...my personal favorite!
Spicy pumpkin, baked in the oven with soft melted cheese!
Tasty entrecote steak with mozzarella, sun-dried tomatoes and pesto.
