Stir-fry shrimps with tomatoes and pesto
This recipe actually was a left-over dish but I kind of like it so much I decided to share it anyway. I just love shrimps and would like to eat them every day, perfect left overs right? :) I served them with a creamy risotto last time I made this dish. The risotto and the shrimps really complement each other. Enjoy!

Fish dish from the oven. Easy to make and just a bit different from your regular fried fish. Typical spring dish with a nice and tasty risotto with for example lemon or tomatoes and mozzarella.

Salmon with pesto
Easy but delicious salmon oven dish. Super easy to make and if you do not have any time, just use pesto from the grocery store. This is almost just as nice!

Portobello with mozzarella and pesto
Filled Portobello's are one of my favorites as an addition to a salad. I do not need a lot more to be happy. In addition it is also a very nice vegetarian tapa dish. You can fill them anyway you want, be creative. This is an example of filling it with mozzarella, tomatoes and pesto.....mmmmm this gives a lovely grilled and melted result.

Pointed peppers filled with mozzarella and homemade pesto
A perfect cheerful and colorful side dish for the summer. You can prepare this side dish perfectly in the oven grill but in the summer it also works on the BBQ. In that case you can just put the peppers on a piece of foil.
