Lovely vegetarian main or side dish. Easy and full of flavours, just very important that the eggplant is really soft, therefore it takes some oven time. But it is worth the wait!

In the Netherlands the summer has started somewhere in April - May, we have been very lucky with long summer evenings and a lot of sunshine already. Personally, when the weather is really good I preferably do not eat heavy meals but just a pasta, salad or some tapas is good enough. This is a really nice and freshly tasting potato salad that is richly filled with bacon, tomatoes and much more, so a great meal for a long summer night!
Nice fresh and homemade pasta dish with a fennel tomato sauce and freshly baked shrimps. I just love the anise flavour the fennel gives to the sauce. Enjoy
Tartare in all the Christmas menus! :) Somehow this year I have been on a tartare inspired track so therefore also a vegetarian tartare of different types of tomatoes. Of course you can serve it as a generic salad but you can also make it a bit more special and serve it as a starter or side dish. The herbal sauce adds a nice bit of spicy flavour.
Filled Portobello's are one of my favorites as an addition to a salad. I do not need a lot more to be happy. In addition it is also a very nice vegetarian tapa dish. You can fill them anyway you want, be creative. This is an example of filling it with mozzarella, tomatoes and pesto.....mmmmm this gives a lovely grilled and melted result.
Super nice vegetarian side dish. Tomatoes, eggplant and mozzarella already proved to be a super good combination and this dish is a very good example. If you double the ingredients you can also eat it as main course.
