Lovely fish dish that is perfectly combining with a smooth mash. I love mushroom -creamy sauces and in this case that is a perfect fit with the soft sole and the ricotta-mushroom filling. The fish is cooked in a white wine and fish broth which makes the fish extra tasty.
Lovely vegetarian side or main dish. The almonds provide a nice bite to the smooth structure of the mushroom and spinach mixture.

Spinach pie..... I remember this was always a huge challenge... lovely and very tasty but challenging to get it right! It was always too wet or too dry. But in the end the taste matters right, and that was always really good. I do not remember the recipe so I created my own but I did steal the idea of my mom of putting the brie on top. This one was delicious and had a perfect structure. Definitely worth making!!!
Starter with brie and mushrooms baked in the grill. The combination of brie and wild mushrooms with the herbs kind of remind me of a wild forest. the red chili adds a bit of spice and therefore it's a very tasty, non boring starter!
