Survived all the Christmas dinners? Did you have fun? We enjoyed two big feeding fests in addition to two nice and cozy days with the family. It was a good time to eat and chat and play some games.

After all of those heavy potato filling dinners, I’m looking forward to a light meal tonight. A good and fresh pasta is always welcome just before we enter the eating mode for New Year’s Eve again. After this pasta dish I’ll help you gather some nice snacks and dishes for New Year’s Eve. I’ll post some nice bits and bites that match a New Year’s game night perfectly, starting from tomorrow.

As said; today it’s time for something normal but really tasty. A pasta with shrimps and a vegetable – white wine sauce.

Ingredients for 4 pers.:

  • 200 gr pasta flour
  • 2 eggs
  • 400 gr shrimps
  • 1 zucchini
  • 1 lime
  • 250 gr cherry tomatoes
  • 10 – 15 black olives
  • ½ red pepper
  • 1 onion
  • 1 garlic clove
  • 3 sprigs of fresh thyme
  • 150 ml white wine
  • olive oil

How to prepare it:

As you might know by now; I’ll always make fresh pasta but you can also make the dish with dried or fresh ready-to-go pasta. If this is the case, prepare the pasta as recommended on the package. I’ll make a note in the recipe when you can start cooking the pasta.

If you are making fresh pasta start with prepping the pasta dough. Take 200 gr of pasta flour and mix this (in you food processor) with 2 eggs and a dash of salt. Once the dough is becoming a nice ball, you put the dough in a bowl in the fridge. You can already put a pan with water on the stove, do the same when you are using dried pasta.

Cut the zucchini in quarters and than into thin slices. Cut the tomatoes in half and cut the olives into thin rounds. Chop the onion, the thyme and the red pepper. Grate the skin of the lime and chop this as well. Squeeze the lime. Take the skin of the garlic and remove the root before squeezing the garlic.

You’ve got the ingredients ready now and they can be added once needed. Put a deep frying pan on the stove and put some olive oil in the pan.

If you are using dried pasta, you can add this to the boiling water now.
Clean your counter top and make sure it’s dry, so you can roll out the pasta dough. Cover your counter top with some flour and roll out the pasta dough until you can cut it into pieces that fit into the pasta machine.

Check if the oil is hot enough in the meantime. If so; add the onion, garlic, chili pepper and thyme to fritter. Let it fritter for 3 minutes before you add the zucchini and lime juice. Make sure you stir once in a while.

Pull the pasta sleeves approx.. 3 times through the pasta machine. For this dish I create tagliatelle so once the sleeves are thin enough I’ll take them through the tagliatelle shaper. After this, hang them on your drying rack.

Stir the zucchini and onion mix, once the zucchini is glazing you can add the shrimps and lime grater. Make sure the pan gets hot and the shrimps are baking. As soon as it’s hot enough, add the white wine.

Add sea salt and olive oil to the boiling water. Put the fresh pasta into the pan. It needs to boil for 5 minutes.

Once the wine is evaporated you can add the tomatoes and olives and stir the mix. Add two tablespoons of the pasta-water. Drain down the pasta and add the pasta to your sauce.

If needed you can add some salt and pepper but usually the sauce doesn’t need it.
