Tilapia is a soft white fish, a little bit similar like pangasius filet and therefore perfectly to heat up in the oven. The soft structure and taste are combining really well with with the freshness of lemon and tomatoes. This dish is very easy to make and therefore perfect for a nice dinner after a long day in the office. Put the fish into the oven, make a nice salad, fry some potato slices and in 30 minutes you will have a perfect and fresh dinner.

Ingredients for 4 pers.:

  • 4 tilapia filets
  • 3 tomatoes
  • 1 lemon
  • 1 red onion
  • pine nuts
  • fresh basil leaves
  • salt and pepper
  • olive oil

How to prepare it:

First of all, please turn on the oven at 200 degrees and let it pre-heat.

Pat the fish with a cloth or some kitchen wipes until it’s dry. Prepare a piece of tin foil per fish, it needs to be approx… 10 – 15 cm larger than the fish (on all sides). Pour some olive oil in the middle, and spread it so it covers the entire bottom of the fish. Lay the fish on top of the oil. Sprinkle some salt and pepper on top of the fish

Boil some water for the tomatoes, make a small cross in the upper skin of the tomatoes and put them in a bowl. Poor the boiling water on top. You’ll see that the skin of the tomatoes is releasing from the tomatoes; drain down the water and rinse the tomatoes with some really cold water. Peel of the skin, remove the seeds and cut the tomatoes into small blocks. Put them in a bowl.

Fritter de onion, grate the skin of the lemon and add the lemon and onion to the tomato blocks. Add some lemon juice, olive oil, salt and pepper and stir well. Cover the fish with the tomato salsa.

Sprinkle some pine nuts on top. Chop the fresh basil and put them on top of the fish as well.

Fold the tin foil lengthwise and roll both pieces together, don’t make it too tight, the fish needs to be able to breathe! Fold both short sides as well so the package is closed now. Put the package in the oven for 20 minutes.
