I love making small toasted sandwiches with all different kinds of toppings. Just to try out what the best combinations are. I must admit, making all different toppings will cost you some time however the result is the best! It’s a small party on your table with all the different types of sandwiches. Perfect for New Years Eve! Enjoy!

Ingredients:

  • 1 ciabatta
  • 1 clove of garlic
  • olive oil
  • 100 gr salmon
  • ½ red chili pepper
  • 1 lime
  • 100 -150 ml (not whipped) whipped cream
  • ½ zucchini
  • fresh basil

How to prepare it:

Start by baking the bread in the oven based on the instructions of the package. Have it cool down and once its cold enough cut it into nice slim slices. Put the slices on a griddle.

Put some olive oil in a small bowl, add crushed garlic of ½ garlic clove (cut the garlic in half, take out the root and squeeze it into the oil) and set it aside so that the garlic can really get into the olive oil.

Use the oil with garlic to grease the bread slices, make sure that you cover all of them and put them under the grill for about 2 minutes until they have a very nice light brown glance, they should be somewhat soft on the bottom and nice and crispy on the top. Be careful that you don’t grill the bread to long, they turn black in a blink of an eye.  Put the bread aside for a moment.

Heat up your grill pan or toasting iron to grill the zucchini. Slice the zucchini in very thin slices by using your mandolin. Place the slices in the grill.

Grate some skin from the lime and squeeze the juice of the lime. Cut the chili pepper and take out the seeds. Chop the chili pepper.

Now you can put the salmon, the chili pepper, the lime grinds and the rest of the lime juice together in the blender. Start blending the ingredients and add the whipped cream slowly; bit by bit. If the mousse is not light and smooth enough, add some extra whipped cream. The structure is very much depending on the freshness of the salmon. You can add the cream until you feel the structure is correct.

Take out the zucchini slices and sprinkle some salt and pepper on top.

Cover the bread with a bit of the salmon mousse. Add some zucchini slices and finish off with some chopped basil.
