A classic dish but so tasty that I didn’t want to keep it from you. Tomato filled with homemade cocktail sauce and shrimps. Sometimes things just remain really good and you shouldn’t change a thing! A party on your plate.
Ingredients for 4 pers.:
- 4 medium sized tomatoes
- 100 gr pink shrimps
- 1 small red onion
- 3 tablespoons of yogurt
- 1 tablespoon mayonnaise
- 1 lemon
- 2 tablespoons passata di pomodori
- powdered pepper
- salt and pepper
- chives
How to prepare it:
Cut the top of the tomato and remove the flesh so that you only have an empty tomato left. To prevent the tomato from tipping over, you can cut a small piece of the bottom as well.
Put the yogurt, mayonnaise, passata, a lot of powdered pepper and some salt and pepper in a mixing bowl. Peel the skin of the onion. Trim and fine slice the onion. Squeeze out a bit of lemon juice. Add the lemon juice and the onion to the mixture. Stir well. Chop the chives and add the chives (keep a bit separated as a garnish). Finally add the shrimps to the mixture as well. Stir again.
Fill the tomato with the cocktails sauce. Top the tomato with some shrimps, a bit of powdered pepper and sprinkle some chives on top.
