Easy and quick traybake with fresh veggies and salmon. Very easy and colorful and by baking the veggies in the oven you get the very natural taste.

Ingredients for 2 pers.:

  • 2 salmon fillets
  • 150 gr green asparagus tips
  • 250 g potatoes
  • 1 large pointed pepper
  • 1 red onion
  • 150 g cherry tomatoes
  • fresh basil

How to prepare it:

Preheat the oven to 200 degrees. Clean the potatoes and put them on the fire with a good layer of water. Bring to the boil and cook for 5 minutes.

Cut off the backs of the green asparagus. Add the green asparagus to the boiling potatoes and cook for another 2 minutes. Then drain everything.

Meanwhile, cut the peppers into bite-sized pieces. Peel the onion and cut it into slices. Place a baking paper on a large oven tray. Divide the onion, potatoes, and peppers over it. Drizzle some olive oil, pepper, and sea salt over it. Place the tray in the oven for 15 minutes. Tip: this dish is super tasty with some basil aïoli. Remove the tray from the oven and add the asparagus, tomatoes, and salmon to the tray. Sprinkle again with some olive oil, pepper, and sea salt. Put back in the oven for another 15 minutes.

Remove the tray from the oven. If you have made it, divide the basil-aïoli over the salmon and potatoes. Also spread some basil leaves over it. Enjoy!
