Bell pepper filled with spicy tuna covered with a delicious melted cheddar! In less words; bell pepper tuna melt hmmmmmm yum yum!

Ingredients for 2 pers.:

  • 2 yellow bell peppers
  • 1 tin of tuna
  • 100 g corn
  • 3 tomatoes
  • 1/2 red onion
  • 70 g cheddar
  • fresh parsley
  • taco seasoning

How to prepare it:

Cut the peppers in half. Remove the seeds and cut a small piece off the back so that the peppers lay stable. Finely chop the parsley. Peel and chop the onion. Cut the tomatoes into very small cubes.

Drain the tuna and put it in a large bowl. Add the parsley, onion and tomatoes to the tuna. Drain the corn and add it. Stir everything together. Stir in some taco seasoning.

Place the peppers in a baking dish in which you have drizzled a bit of olive oil.

Fill the peppers with the tuna mixture. Grate the cheddar on top. Put the peppers under the grill for 15 minutes. Finish with some parsley and serve immediately.
