Raw tuna, smooth and soft avocado and a lime-mayonnaise; the perfect combination of flavours. Most important is to make sure that your tune is really fresh, you do not want to get sick of course 😉 but also for the taste it is so much nicer if the tuna is really fresh. This starter is really is to make and due to the combination of flavours and colours on the plate it is a raising star.

Ingredients for 2 pers.:

  • 150 gr fresh tuna
  • 1 avocado
  • 1 egg
  • 1 teaspoon mustard
  • 1 lime
  • 50 – 100 ml sunflower oil
  • a bit of parsley
  • salt and pepper

How to prepare it:

Chop the tuna into very thin and small pieces. Put them in a bowl and add some salt and pepper. Stir well.

Put the egg, the lime juice, the mustard salt and pepper in a jar that you can use with your food processor.

Mix all the ingredients with the food processor.  Now add sip by sip a bit of sunflower oil whilst you are still mixing. Repeat this until the mayonnaise is firm but airy.

Use a cooking ring to create small rounds of tuna tartare. Cut the avocado into small slices and put them on the plate with the tuna tartare. Add some dots of lime-mayonnaise and chopped parsley.
