Healthy and delicious quiche with tuna, pointed pepper and olives and a bottom of zucchini!

Ingredients for 2 pers.:

  • 4 eggs
  • 2 cans of tuna
  • 1 zucchini
  • fresh dill
  • 250 ml cooking cream
  • black olives
  • 1 red pointed pepper
  • 1 clove of garlic
  • 1 onion
  • 75 gr grated cheese
  • salt and pepper

How to prepare it:

Pre-heat your oven to 200 degrees.

Start by mixing the cooking cream, the eggs, some salt and pepper and the chopped dill. Stir well and put aside.

Cut the endings of the zucchini and use a mandolin to create very thin strings of the zucchini. The zucchini will be the bottom of the quiche. Use a bit of olive oil to grease in the spring form and cover the bottom and the sides with the zucchini strings.

Peel and fine slice the onion. Cut the pointed pepper into small blocks. Cut the olives into small slices. Put the onion, olives and pepper in a mixing bowl. Rinse the tuna and add it to the vegetables. Peel the garlic, cut it in half, remove the root and squeeze the garlic with the tuna mix. Stir everything well.

Divide the tuna mix over the zucchini and poor the egg mix over the tuna. Divide it equally. Fold the zucchini over the mix and finish with the grated cheese in the middle.

Place the quiche in the oven for 20 to 25 minutes. Check with a thin wooden stick if the quiche is ready, if there is no residue remaining on the stick it is ready to serve.
