Easy, working day oven dish! Lovely and fulfilling after a long working day!

Ingredients for 2 pers.:

  • 175 g vegetarian mince
  • 1 onion
  • 1 broccoli stump
  • 5 large potatoes
  • 2.5 teaspoons powdered curry
  • 2 tablespoons flour
  • 75 g parmesan cheese
  • 150 ml milk
  • Pepper

How to prepare it:

Peel and shred the onion. Remove the broccoli florets from the stump and put it on the heat with plenty of water. Peel the potatoes and put them on the stove with plenty of water as well. Let both cook for about 12 minutes as soon as the water boils.

Meanwhile, put a baking pan on the heat and fry the onion briefly with the vegetarian mince. Add half a teaspoon of powdered curry. Remove this mixture from the heat and cover the bottom of a flat baking dish.

Grate the parmesan cheese.  Put a saucepan on the heat and add plenty of butter. Once the butter has melted, add 2 teaspoons of powdered curry. Let it bake for a minute before adding the 2 tablespoons of flour. Stir well with a whisk until everything clumps together. Now you add a little milk. Keep stirring well despite everything appearing to be stuck together. Keep adding a little by little milk and you will notice that you slowly stir out the lumps and create a smooth sauce. Now add 2/3 the parmesan cheese and melt it through the sauce, keep stirring regularly. If you find the sauce too thick, add some extra milk.

Drain the broccoli and potatoes. Divide the broccoli over the vegetarian mince.

Cut the potatoes into thin slices (note this can still be hot) and divide it between the broccoli. Pour the curry sauce over the potato slices and finally sprinkle some pepper and parmesan over it           .

Put the dish under the grill for another 10 minutes.
