Lovely vegetarian side or main dish. The almonds provide a nice bite to the smooth structure of the mushroom and spinach mixture.
Ingredients for 2 pers.:
- 2 leaves of thin pastry
- 150 gr wild mushrooms
- 200 gr fresh spinach
- 1 egg
- 2 table spoons of herbal cheese
- handful of almonds
How to prepare it:
Pre-heat the oven on 200 degreed.
Cut the mushrooms in quarters. Place a frying pan on the stove. Add a bit of oil and fry the mushrooms for 10 minutes. Add the herbal cheese and melt it with the mushrooms. Chop the spinach and add it as well.
Separate the yolk from the egg white, we do not need the egg white. Chop the almonds. Place the pastry flat on a plate. Place half of the mushroom mixture in the middle of the pastry. Sprinkle some almonds on top and fold the pastry. Use the yolk to grease in the pastry. Repeat the exercise for the second package as well.
Place the packages in the oven for 12 minutes.
