Lovely vegetarian dish filled with veggies, just let it boil!

Ingredients for 2 pers.:

  • 6 small potatoes
  • 300 gr spinach
  • 1 onion
  • 1 garlic clove
  • 2 eggs
  • fresh parsley, basil, thyme
  • 500 ml tomato passata
  • 50 gr feta
  • 1 red bell pepper
  • 1 yellow bell pepper
  • salt and pepper

How to prepare it:

Start by chopping the spices and cutting the vegetables. Peel the garlic, cut it over half, remove the root. Peel and chop the onion. Wash the peppers. Cut it over half, remove the seeds and cut the peppers into small pieces. Chop the spinach smaller.

Put the tajine (or a casserole) on the fire. Put some oil in it and heat it. Press the garlic in the tajine and add the onion. Heat up everything.

Now add the thyme and the passata, stir well. Now put the potatoes in the tomato sauce. Also add the paprika and spinach. Bring the whole to a boiling point.

Taste the sauce and add some salt and pepper to taste if necessary. Also add the parsley.

Let everything boil and break the eggs in the sauce. Bring back to boil and cook for another 10 to 15 minutes (until the eggs are hard)

Grate the feta over the dish and sprinkle the basil over it.
