Lovely veggie skewers with halloumi cheese marinated in mint-lime oil! Perfect fit with the slightly sweet flavour of the bell peppers.

Ingredients for 2 pers.:

  • 100 ml olive oil
  • 1 red pepper
  • 1 yellow pepper
  • 1 zucchini
  • fresh mint
  • halloumi-cheese
  • 1 lime
  • sea salt

How to prepare it:

Finely chop the mint and grate the zest of the lime. Finely chop the lime zest. Add the lime zest and mint to a large drizzle of olive oil and let it briefly retract.

Cut the zucchini into slices of 0.5 cm. Cut the peppers into 2 by 2 cm pieces and cut the halloumi into large cubes. Thread the vegetables and cheese to the skewers.

Place the skewers in a deep bowl or on a plate and brush with the mint-lime marinade.

Now place the skewers on the whole BBQ and grill the vegetables for 10 minutes.
