Fish time! Last summer we mainly focused on nice salads due to the weather but now it is time for some lovely fish dishes again. Starting with a nice, tasty easy dish from the oven with green asparagus, pesto and cherry tomatoes.

Ingredients for 2 pers.:

  • 2 fish fillets
  • 200 gr green asparagus
  • 100 gr cherry tomatoes
  • 1 clove of garlic
  • ½ red chili pepper
  • olive oil
  • fresh pesto
  • ½ lemon
  • salt and pepper

How to prepare it:

Pre-heat your oven to 220 degrees.

Peel the garlic, cut it in half, remove the root and squeeze the garlic in a small mixing bowl. Add some olive oil. Cut the red chili in half, remove the seeds and fine slice the chili. Add the chili to the garlic and stir well.

Poor some of the oil into an oven dish. Lay the fish on the bottom and cover the fish with the garlic-chili-oil mixture. Put the dish into the oven for 10 minutes.

Take the dish out of the over and place the green asparagus and the cherry tomatoes on top of the fish. Sprinkle some lemon juice, oil, salt and pepper on top. Divide the pesto over the green asparagus.

Put the dish back in the oven for another 10 minutes.
