Lovely salad with yellow zucchini, pesto, bell pepper and parmesan cheese! The zucchini comes freshly from my moms garden and even though I am not planning to have my own vegetable garden, I have to admit the taste is so much better, much smoother and full of flavours!

Ingredients for 2 pers.:

  • 1 yellow zucchini
  • 1 orange bell pepper
  • 2 table spoons of yogurt
  • 20 gr fresh basil
  • 1 garlic clove
  • ½ lemon
  • 40 gr parmesan cheese
  • Olive oil
  • Pepper
  • fresh parsley

How to prepare it:

Start by making the pesto. Take the leaves of the basil and put them in the blender. Strip the garlic and cut out the root. Squeeze the garlic over the basil. Add the pine nuts. Squeeze out the juice of the lemon and add the juice to the blender. Add a sip of olive oil and mash everything. Once a nice paste has emerged you can add the parmesan cheese and some pepper, mix everything once more. Add the yogurt so you get a smooth yogurt -pesto sauce.

Wash the vegetables. Cut the zucchini into thin slices with your mandolin. Grill the yellow zucchini in your grill pan until the slices become glassy. Meanwhile, cut the peppers into small pieces and chop the rest of the basil, the spring onion and parsley finely.

Place the grilled zucchini on a plate. Divide the paprika over it. Sprinkle the spices, the spring onion and some pepper over the plate. Sprinkle the yogurt-pesto sauce over it and finally grate a bit of parmesan cheese on top.
