Delicious vegetarian side or main dish! The cookies are a bit spicy and nice refreshing due to the yogurt dip!

Ingredients for 2 pers.:

  • 1 zucchini
  • 2 eggs
  • 1/2 red chili pepper
  • 1 lime
  • powdered curry
  • fresh parsley
  • 3 table spoons of flour
  • 2 table spoons of Greek yogurt
  • salt and pepper

How to prepare it:

Wash the zucchini and grate it into small pieces. Squeeze the juice of the lime. Cut the red pepper in half, remove the seeds and chop the red pepper. Put the zucchini, the eggs, the flour, ½ of the lime juice, a lot of powdered curry and half of the red pepper in a bowl. Stir well. If the combination is too wet, please add some additional flour, some salt and pepper and stir well.

Put a frying pan on the stove with a bit of butter. Once the butter is hot you can start baking the cookies.

Add 1 large tablespoon per cookie. Fry the cookies on a high fire and turn them regularly. They need to fry from 5-8 minutes depending on the thickness of the cookies.

In the meantime, you can make the yogurt dip. Put the yogurt in a bowl, add the chopped red pepper, some salt and pepper and the remaining lime juice. Chop the parsley and add the parsley as well. Stir everything well.
