Rolling, rolling, rolling… 🙂 It’s real nice and easy to come up with a new combination of flavours if you already have a working recipe. After the eggplant rolls, I started to think about new combinations and possibilities and here you go! Zucchini with Coppa di Parma and ricotta cheese. Of course not every new combination is a success but my try-out guests liked it and I hope you do too!

Zucchini filled with ham and ricotta

Ingredients for 4 pers.:

  • 1 zucchini
  • 80 gr Coppa di Parma
  • 100 gr ricotta cheese
  • Powdered paprika
  • Pepper

How to prepare it:

Pre-heat the oven to 180 degrees

Wash the zucchini and cut off both of the edges. Cut the zucchini in half over the long side. Use a mandolin or a very sharp knife to cut the zucchini in very thin slices. Put a grilling pan on the stove. Grill the zucchini on both sides until the grilling pattern forms.

Put the slices on a plate. Put a slice of Coppa di Parma on the widest part of the zucchini. Add a bit of ricotta and sprinkle some powdered paprika and pepper on top. Roll-up the zucchini.

Put the zucchini rolls into the oven for 15 minutes.
