Zucchini filled with cheese and tomatoes. Easy, tasty and still a bit special 🙂
Ingredients for 4 pers.:
- 1 zucchini
- 2 tomatoes
- 100 gr ricotta cheese
- powdered paprika
- pepper
How to prepare it:
Pre-heat the oven to 180 degrees
Wash the zucchini and cut off both of the edges. Cut the zucchini in half over the long side. Use a mandolin or a very sharp knife to cut the zucchini in very thin slices. Put a grilling pan on the stove. Grill the zucchini on both sides until the grilling pattern forms. Cut the tomatoes into small slices.
Put the slices on a plate. Put a slice of tomato on the widest part of the zucchini. Add a bit of ricotta and sprinkle some powdered paprika and pepper on top. Roll-up the zucchini.
Put the zucchini rolls into the oven for 15 minutes.
