Lovely vegetarian zucchini pasta with vegetarian meat balls, tomato sauce and melted mozzarella.
Ingredients for 2 pers.:
- 250g zucchini pasta
- cherry tomatoes
- 1 mozzarella
- vegetarian meatballs
- 200ml tomato sauce
- 1 spring onion
- fresh basil
- 100ml vegetable stock
- black olives
How to prepare it:
Put the tomatoes in the grill for 10 minutes with some olive oil and sea salt.
Put a deep-frying pan on the heat, put in the vegetable stock and bring to the boil.
In addition, put a small saucepan on the fire and heat the tomato sauce in it. Meanwhile, cut the olives into small slices, finely chop the spring onion and cut the mozzarella into cubes (keep 2 slices separate for the garnish.
As soon as the broth boils, add the zucchini pasta and simmer gently while stirring occasionally. Add the mozzarella, basil, spring onion and olives to the tomato sauce and bring to the boil.
Drain the zucchini pasta and return the pan to the heat. Add the vegetarian meatballs and bake for 5 minutes. Stir occasionally into the tomato sauce.
Remove the tomatoes from the grill. Serve the zucchini pasta with the meatballs and tomato sauce. Place the grilled tomatoes and a slice of mozzarella on top.
