Lovely zucchini – salmon oven dish, could be really well used as a starter as well.

Ingredients for 2 pers.:

  • 150 gr smoked salmon
  • 1 zucchini
  • 500 ml passata di pomodori
  • 1 lemon
  • 250 gr ricotta cheese
  • 1 clove of garlic
  • parmesan cheese
  • pine nuts
  • fresh parsley and basil
  • salt and pepper
  • 1 table spoon of mustard

How to prepare it:

Pre-heat your oven to 200 degrees. Chop the herbs. Peel the garlic, cut it n half and remove the root.

Put the ricotta together with half of the chopped herbs, some salt and pepper, the mustard and some lemon juice in a mixing bowl, stir well and add some pine nuts.

Put the tomato passata in another bowl, add the rest of the herbs and squeeze out the garlic. Finish off with some salt and pepper.

Cut the zucchini (with a mandolin) into thin slices. Place them on a plate, lay a bit of smoked salmon on top and finish with a spoon of the ricotta mixture. Roll the slices with the ricotta and salmon inside.

Poor the passata in an oven dish. Place the salmon-zucchini rolls straight up in the tomato sauce. Sprinkle some fresh basil and parmesan cheese on top. Place the oven dish in the oven for 40 min.
